Umami House started with a single dented stockpot and a stubborn belief that a bowl of ramen can stop time. We opened on a rainy corner in 2019 with nine seats and one flavor.

Four things we refuse to rush. This is the whole secret — there is no secret, just time and care.

The Broth

Pork and chicken bones roasted, then simmered for twenty hours until the broth runs milky and rich. We skim it by hand. Twice.

The Noodles

Milled wheat, kansui, and a little patience. Pulled fresh each morning for that unmistakable springy chew.

The Tare

The soul of the bowl. Our shoyu and miso tares age for weeks, layering salt, sweet, and deep umami into every spoonful.

Ajitama, chāshū, nori, scallion — plated to order in under sixty seconds so it hits your table piping hot.
